Cloudberry jam – the arctic gold as they call it. It looks like golden raspberries, but has a very characteristic and exotic flavor. Cloudberries are almost impossible to cultivate making foraging the only viable option. The berries grow up in the arctic swamps so not all that easy to find – but when you do it is like you’ve struck gold.
It is brilliant in desserts, warm it up and serve with ice cream – or on waffles or pancakes for a luxorious twist. This quite exclusive jam is great in baking and dessert making: cloudberry pannacotta, cheesecake or sorbet can be absolutlely spectacular. We also love it with Västerbotten cheese if you are after a savoury option and it is absolutely a must with Bread Cheese.
